Pick Your Board
Whether wood, marble or slate, you should start with a solid surface to begin constructing your plate. Mind how many people you will be serving so you don’t choose something too large or too small. Don't make it a "hover board" meaning...if round, consider a lazy Susan so people don't have to reach over it to grab things or use a square or rectangular shape.
Variety is Key
When it comes to picking the cheese make sure you have a mix. Some soft cheeses such as brie to harder ones like asiago. Different flavors, colors and textures will create not only a beautiful looking contrast, but a fun adventure of taste. Also, cut your cheese in a variety of shapes and sizes. Make sure you have a separate knife for each cheese as to not mix flavors and serve at room temperature.
Creative Sides
You can include staples such as charcuteries, nuts, crackers, jams and dried fruits. If you want to mix it up go for exotic fruits such as passion fruit and colorful veggies and spreads such as a beet hummus.
Constructing the Spread
Start with big cheeses and bowls and build around that. This will ensure you have space for the larger components and then you can always fill in the gaps with the smaller ones. If you still have too much empty space you can garnish with leafy greens which also add another pop of color.
Pair a Wine
If you want to include vino along with your board you will have to pair with the different cheeses so always include a red and a white. The heavier the cheese the heavier bodied wine and vice versa is the rule of thumb. Softer, delicate cheeses go best with lighter, fruitier wines while the tannins in the red wine pair well with full-bodied, flavorful cheeses and can serve as a palate cleanser as you sip.
