​​​​​Fall Veggie Tacos

Get ready for National Taco Day with this recipe that includes eggplant, butternut squash, and arugula

It's officially Fall, and with National Taco Day (October 4th) around the corner, we are whipping some up with an autumn twist. Try this new take on the taco with some of our favorite fall veggies.

Ingredients:
Eggplant
Butternut squash
Arugula
Cooked quinoa
Feta
Avocado Greek yogurt dressing
Olive oil

Instructions:
Prep your veggies:
-Chop eggplant and butternut squash into cubes and put them into a bowl
-Mix in 1 tsp olive oil
-Grill on a sheet pan at 425 degrees for 20 minutes

How to build your tacos (best with soft shells):
-Add 1 Tbsp of quinoa and spread out onto the shell
-Top with arugula, eggplant, and butternut squash
-Sprinkle on feta
-Drizzle 1 Tbsp of Avocado Greek yogurt dressing
-Add a squeeze of fresh lemon juice
