Love pancakes but hate the high carb count? This National Pancake Day we got you covered with this keto-friendly version of the breakfast classic. So stack ‘em high and enjoy guilt-free.
-1/2 c. almond flour
-4 oz. cream cheese, softened
-4 large eggs
-Butter, for frying and serving
-In a medium bowl whisk almond flour, cream cheese and eggs until smooth.
-In a nonstick skillet over medium-low heat, melt 1 tablespoon butter.
-Pour in about 3 Tbsp batter and cook until golden, about 2 minutes.
-Flip and cook 2 minutes more.
-Top with butter and serve.
