Perfect Pizza Crust
Tips and tricks to make pizzeria-style crust at-home

February 9th is National Pizza Day. The key to making a delicious pizzeria-style pie at home is in the crust. Here is how to get the perfect foundation for your next homemade pizza.
2 cups warm water
1 package or 2¼ tsp active dry yeast
1 tbsp sugar
1 tbsp olive oil
2 tsp salt
5½ cups all-purpose flour
2 cloves minced garlic
-In a mixer, combine warm water, yeast, and sugar. Then let sit for 5 minutes.
-Add olive oil, salt, and flour and mix, starting on low speed for 30 seconds to combine ingredients, then for another 8 minutes on medium-high until dough is completely smooth and no longer sticks to sides. You can also hand-knead the dough for about 12-15 minutes.
-Divide dough into 2 large balls for 16" pizzas or 8-10 smaller balls if you want to make personal size pizzas.
-Let dough proof (left to rise/ferment) in the refrigerator for a minimum of 24 hours and up to 72 hours.
-Once the dough is proofed, put dough out on a lightly floured surface and stretch instead of rolling to ½ inch thick or less if you want the thin crust.
-Transfer to a pizza peel or sheet pan. Make sure to preheat your surface in a hot oven for at least half an hour before baking. To avoid sticking, sprinkle the pan with cornmeal or line the pan with parchment paper.
-To amp up the flavor, brush the crust with an olive oil and garlic blend. Simply pour extra virgin olive oil into a dish and add minced garlic. Before adding any other toppings, brush your crust with it, making sure to get some pieces of garlic on it too.
-For a crispier crust, bake the crust for 5-8 minutes only, then take it out and let it cool before adding toppings. If you do not want a crispier crust, top it with a light layer of sauce, cheese, and your favorite toppings.
-Bake at 500 degrees for 10-14 minutes. Cook time will be dependent on how thick you roll out the dough.
-Make sure the oven is hot. To brown the crust, your oven temperature must be high enough to bake the pizza within 6 to 8 inches from the top.
