Arugula with Watermelon and Feta
Serves 6
Ingredients:
1 box or bag of arugula
3 cups chopped watermelon chunks
½ cup chopped good feta cheese
1 tablespoon julienned fresh mint (optional)
Directions: Toss together
Homemade Vinaigrette Dressing: Use a glass measuring cup for easy measuring and pouring. Combine ½ cup olive oil with ¼ cup freshly squeezed lemon juice. Add 1 teaspoon of kosher salt and ½ teaspoon of freshly ground black pepper. Whisk until combined.
Tomatoes, Peaches, and Corn with Burrata
Serves 6
Ingredients:
3 pounds assorted ripe tomatoes, cored and cut into ¼-inch thick slices
3 ripe peaches, pitted and thinly sliced
3 large ears of corn, cut off the cob
½ cup julienned fresh basil, plus whole basil leaves for serving
⅓ cup extra-virgin olive oil
3 tablespoons white wine or champagne vinegar
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 8-ounce balls of fresh burrata
Flaky sea salt for serving
Directions: Combine the tomatoes, peaches, corn, and basil in a large bowl. In a glass measuring cup, whisk together the olive oil, vinegar, salt, and pepper. Pour enough dressing over the salad to moisten, and toss gently. Spread out the tomatoes, peaches, and corn in an even layer on a large serving platter. Place the burrata balls on top, and using a paring knife, carefully cut an "X" shape on the top of each ball to cut into quarters. Sprinkle the salad with basil leaves and flaky salt, drizzle with the remaining dressing, and serve.
Dressing hack: If you're preparing a salad ahead of time, pour the dressing in the bottom of a large salad bowl and then place your ingredients on top. Toss together right before serving and you'll avoid a soggy salad.
